1 pound ground chuck chuck 2 cups water 3 cups water, plus salt and pepper 1 medium onion, finely diced 3 cloves garlic, minced 1 pound bone-in beef chuck, cut into 1/2-inch cubes (cut into chunks) 1 cup vegetable stock 1 tablespoon salt, plus more to taste 2 tablespoons olive oil 2 tablespoons chopped fresh cilantro leaves (optional) 1/4 cup chopped fresh thyme leaves (if using) 1 tablespoon ground cinnamon 2 teaspoons ground nutmeg 1/8 teaspoon ground cloves 1/16 teaspoon ground allspice 1/3 cup dry red wine vinegar (if you want to use it) 1 teaspoon paprika 1 teaspoon salt 1 teaspoon black pepper Directions For the meat: Place the ground chuck in a large pot.
Bring to a boil over medium heat.
When the meat begins to cook, turn down the heat to low.
Simmer the meat for 30 to 45 minutes, or until the meat is cooked through.
For the onions: In a large bowl, toss the onions with 1 tablespoon olive oil, 2 tablespoons salt, and 1 teaspoon ground nutmegs.
Toss until the onion is completely coated with the oil.
Add the minced garlic and onion to the onions and toss well.
Season with salt and spices and toss again.
Add 2 tablespoons water and cook for 5 minutes, stirring frequently.
Add 1 teaspoon of the stock and stir to combine.
Cover and cook on low heat for an additional 5 minutes.
Season to taste with more salt and spice.
(For this recipe, we used 1 cup of stock and 1/5 cup of water.)
To make the beef: Combine all of the ingredients for the beef chuck and ground chuck and stir in.
Let the mixture sit at room temperature for 5 to 10 minutes.
